Our story

Two bakers, one oven, 4am starts.

Ines Marlow ran the pastry section in restaurant kitchens for ten years. Tom Achebe-Hart grew up above his family’s mill and has never trusted a loaf with a short ferment. In 2019 they took over a former print shop on Harcastle Row, put a second-hand deck oven where the press used to be, and opened with three breads and a croissant.

Today there are nine of us, two farms we buy grain from, and a queue on Saturdays. The recipes are written on the wall, the starter is from that first winter, and the counter still empties by four.

Ines, Tom and their story are fictional, written for this concept.

Questions

Why do you sell out?

We bake once (twice for some breads) and don’t freeze dough to stretch the day. When it’s gone it’s gone, which is why today’s counter shows what’s going fast, and why pre-ordering is the safe way to get your loaf.

Do you take cash?

Card and phone payments only, at both sites. Pre-orders are paid on collection.

Can I bring my dog?

Yes, to Brockley. The Hatch is a hatch, so your dog can wait with you in the yard.

How should I store sourdough?

Cut side down on a board, or in a cloth bag, for three or four days. Slice and freeze anything you won’t eat by then; toast it from frozen.

Are you on Deliveroo?

No. Bread is best collected, and we’d rather keep prices fair than pay platform commission.
